May 8th - We have a really good fish van here on Wednesday to Friday....but the trouble with working late is that if you get to it at all then you just get what's left. However I had an afternoon off and managed to get to the van...and saw some monkfish. It's probably available all the time but I had never seen it before so that called for a bit of a new recipe. Scouring the Internet yielded a recipe for Monkfish wrapped in Parma ham which looked easy and tasty....just the sort of recipe I like. And easy it was...overlapping the slices of Parma ham, laying the fish on it, seasoning, rolling and then drizzling with olive oil before baking. I made a sauce with leeks an cream - I'll admit it could have been a tad more delicate and refined but ..... here's the result.
